Fruit-based creations already make up 22% of offerings in India’s foodservice market, reflecting a growing appetite for vibrant, visually striking, and health-conscious options.

Alongside flavor innovation, health awareness is reshaping how Indians enjoy their coffee. Sales of no-sugar and low-sugar beverages doubled in 2024, now accounting for 10% of the market. To meet this demand, cafés are swapping refined sugar for alternatives like jaggery, honey, stevia, and Gula Aren—a traditional Indonesian palm sugar with a low glycemic index. The focus is on letting natural sweetness highlight coffee’s authentic character.

This shift goes beyond taste or nutrition. It’s about storytelling and identity. A fruit-infused espresso or a thoughtfully sweetened latte reflects a desire for drinks that are as wholesome as they are beautiful.
