Tepache: Mexico’s Fizzy Pineapple Drink That’s Good for Your Gut

Looking to ditch sugary sodas this year? Try Tepache, a lightly fermented Mexican drink made from pineapple peels and cores. This golden, fizzy beverage is not only refreshing but also packed with probiotics to support your gut health.

Traditionally sold by street vendors in clay barrels, Tepache is made by fermenting pineapple scraps with brown sugar or jaggery and spices like cinnamon and cloves. The result is a tangy, naturally fizzy drink, reminiscent of soda but much healthier. Like kombucha, it ferments quickly, though longer fermentation can produce a mild 1–3% alcohol content.

Making it at home is simple: soak cleaned pineapple skins and core in water with jaggery and spices, cover loosely, and leave at room temperature for 24–48 hours. Tiny bubbles form as the liquid turns lightly sour and aromatic. Strain and chill once it reaches your preferred sweet–tangy balance.

In India, Tepache can be made anytime with local pineapples. Add twists like black salt, fresh ginger, mint, or a dash of chili powder. Serve over ice for a healthy soda alternative, or mix with rum, gin, or vodka for a tropical cocktail.
