Eating Vitamin C-Rich Foods Can Boost Skin Collagen, Study Shows.
Vitamin C is proving itself as a powerhouse nutrient for skin health. Recent research confirms that eating vitamin C-rich foods can significantly enhance collagen production and support skin renewal from within.
A study by the University of Otago, published in the International Journal of Investigative Dermatology, involved two dozen healthy adults in New Zealand and Germany. Researchers found that vitamin C levels in the skin closely reflect the amount in the blood. Increasing dietary vitamin C was shown to improve skin thickness—a key marker of collagen—and stimulate regeneration of the outer skin layer.
Participants who ate two kiwifruits per day saw notable improvements in skin collagen. Besides kiwis, vitamin C is abundant in citrus fruits like oranges, lemons, and grapefruits, as well as strawberries, blackcurrants, red and yellow peppers, broccoli, tomatoes, and potatoes.
Collagen, the body’s most abundant protein, provides structural support for skin, bones, tendons, ligaments, and connective tissues. It keeps skin firm and elastic, cushions joints, strengthens bones, and aids wound healing, making it essential for healthy aging.
Lead author Professor Margreet Vissers from Mātai Hāora – Centre for Redox Biology and Medicine, said:
“The correlation between plasma vitamin C levels and those in the skin was far stronger than in any other organ we have studied. This is compelling evidence that skin function is best supported from the inside out.” She added that while vitamin C is often added to skincare products, it’s poorly absorbed through the outer skin barrier.
“Our study shows the skin absorbs vitamin C efficiently from the bloodstream, prioritizing uptake into the outer epidermal layer. Eating vitamin C-rich foods is therefore the most effective way to boost collagen.” The findings underscore the age-old advice that beauty comes from within, showing that a vitamin C-rich diet is key to maintaining youthful, healthy, and resilient skin.
